Culinary Arts brings street food to Interurban

“It’s trendy and appealing and we’re serving it up hot and ready to enjoy,” says Camosun Culinary Arts Chair Steve Walker-Duncan, as he describes his department’s new student-run food cart touring Interurban campus weekly starting on Wednesday, November 29.

“For the first two weeks, we’re cooking up delicious ramen noodle soup offering great value at just $10 served in large appropriately sized bowls.”

The new initiative is part of Culinary Arts’ efforts to broaden and deepen the educational experience for students with a distinct focus on applied learning. “This is putting our students out there on the front lines, a little outside of their comfort zone,” says Walker-Duncan. “That in turn sets them up well to enter the industry and succeed.”

The launch takes places on Wednesday, November 29 from 11am to 1pm in the atrium of the Centre for Business & Access (CBA) building at Camosun’s Interurban campus. Everyone is welcome and purchases are cash only. The first two Wednesdays will feature ramen bowls with a traditional combination of pork or chicken in a rich broth, with vegetable garnishes, noodles and egg. Starting up again in January, Walker notes that students have come up with delicious ideas for future offerings with plans for a taco station and a chilli bar in the works for the New Year.

The cart is operated by students in the Professional Cook 1 advanced class and managed with supervision from an onsite instructional assistant. Proceeds cover the cost of food products and instruction; making it part of an enhanced learning exercise for students, rather than a profit-making opportunity.

“It’s not designed to compete with the excellent food offerings around the campus,” notes Walker-Duncan. “We want to expand the offerings over and above the great selection that Aramark and the Culinary Arts department provides, while enhancing the applied learning opportunities for our students, and bring delicious food to where the students are in the buildings around campus.”
