Nine apprentice cooks from across Canada were at Camosun College on Friday, October 23, 2009, each of them trying to cook their way to the national title in La Chaine des Rôtisseurs national Jeune Commis Rôtisseur (Young Cook) competition.
Representing British Columbia was Matt Chamberlain, who earned this opportunity by first winning the provincial competition. Chamberlain completed the Professional Cook Training foundation program at Camosun College in 2005 and followed up with the technical training components required for his apprenticeship. He is now a senior apprentice with the Fairmont Empress Hotel, well on his way to earning the full Red Seal Cook’s accreditation.
“Camosun’s cook training centre is well designed for an event of this stature,” says Gilbert Noussitou, chair of Camosun’s Professional Cook Training program. “We are especially proud that one of our own apprentices is representing our province in this national contest.”
Each competitor had to design and cook a three-course meal, using key ingredients that were kept secret until the competition began. Four professional chefs judged from within the kitchen, assessing cooking techniques, cleanliness, and organizational skills. The final plates were judged by a 12-person panel consisting of professional chefs and foodies from across the country.
At the end of the day, the winner was Stephanie Schnepf from Calgary. She will represent Canada in the international competition to be held in Helsinki, Finland, on September 17.
Professional cook training at Camosun
For almost 40 years, students have been coming to Camosun College for professional cook training. Over the years, several Camosun students have won top prizes at the provincial and national levels. The last Camosun student to win this national competition was Daniel Craig in 2005 when the event was hosted in Edmonton, Alberta. An apprentice with the Delta Ocean Point Resort, Daniel went on to win the 2006 international competition in Adelaide, Australia.
La Chaîne des Rôtisseurs is an international gastronomic society with both non-professional “gastronome” and culinary professional members in more than 75 countries. Competitions are open to young cooks under the age of 27 and are held at regional, national and international levels in countries around the world.
